5 Days Of Soup: Chilled Melon + White Wine Gazpacho

It's happening, friends! All of this soup we are cooking is making the rain clouds run! I can see swirly turquoise skies, like the color of a Monet painting, today.
But we can't stop now.
So on the third day, they made gazpacho.
Chilled Melon + White Wine Gazpacho
1 melon or cantaloupe, weighing at least 2 1/2 pounds
2/3 cup sugar
1 cup dry white wine
lemon juice
2/3 cup creme fraiche
1) Discard the seeds & scoop the flesh from the melon. Ideally you should have at least 1 1/2 of weight, but don't worry if you have a bit more or less.
2) Dissolve the sugar in 2 1/2 cups of water over low heat, then simmer for 4-5 minutes. Remove from the heat and let cool completely.
3) In a food processor or blender, process the melon with the wine until smooth, then gradually add the cool syrup. Stop when the mixture tastes just a little sweeter than you would ideally like it. Now mix in a few good squeezes of lemon juice and creme fraiche. Serve chilled.
I'm going to throw a few sprigs of mint on top of mine, too. Don't you think that serving this before dinner in dainty bowls would be so refreshing? Bonus: it's sort of like sneaking in dessert before the main course.
