5 Days Of Soup: Smoked Cauliflower Cheese Soup

Alright, friends, here we go. Day Two.
Yesterday, this.
Today, this {which I think may just be my soup soulmate!}...
Smoked Cauliflower Cheese Soup
1 cauliflower, broken into florets
1 large onion, chopped
1 medium potato, cut into cubes
2 garlic cloves, sliced
2 tbsp butter
1 quart hot vegetable or chicken stock
salt & freshly ground black pepper
3 1/2 oz coarsely grated smoked cheddar
a shake of cayenne pepper, chives & sour cream to garnish
1) Cook the vegetables & garlic with the butter in a covered pan over low heat for 10 minutes, stirring once or twice. Add the stock, a little salt & lots of freshly ground pepper & bring to a boil. Simmer until the cauliflower & potato are just tender (don't overcook). Process the soup in a blender until smooth, adding more stock or a little milk to thin it down as necessary.
2) Reheat the soup gently, but do not allow to boil. Stir in two-thirds of the cheese, taste and see if you think it needs more. Garnish.
Hint: this is a perfect spot to find the best smoky cheddar for the soup. Have you tried any of the recipes yet?
